Vanilla sponge cake recipe



 Today's recipe is a classic recipe and flavor which is  loved by a lot of people .It is easy to create and you can cover it with icing  or eat it simply plain 👌👌,  plus  it can be kept refrigerated for up to a week in a cool tight cake cover.. Keep in mind  though that the longer you keep your cake in the fridge , the longer it will be retain some  moisture in the case that  it is plain , it bit  start to dry out a bit .

Perfect Vanilla Cake

makes 8 servings

Ingredients

1 1/2 cups cake flour *

3/4 cup self-raising  flour

1 cup white sugar

1 teaspoon baking powder

3/4 teaspoon baking soda

3/4 teaspoon  fine table salt

3/4 cup  cooking oil , 

2 large eggs 

1/2 cup buttermilk/fresh  milk

2 teaspoons vanilla extract/ essence

Recipe Notes

** If you don't have buttermilk, you can simply use fresh cream milk .if the batter is a little too thick ,you may add more milk  to  he dough until it is at a good consistency for you.

*** This layer cake can also be baked in two  22 cm  diameter or medium  sized  cake pans. you can bake one whole cake or separate the batter into two cake pans to cover your cake with slices better.

Instructions 

1. Preheat the oven to 180  Degrees Celsius , grease two medium or 23 cm diameter cake pans , and line them with baking paper.

2. Place the cake flour, all-purpose flour, sugar, baking powder, baking soda and stir on low speed to combine ingredients together .

3. Add the butter, mixing on medium-low speed until the mixture combines well together for one minute.

4. Add the eggs, one at a time, making  sure that  all of the ingredients are fully incorporated.

5. Add the  milk and vanilla essence .

6. Mix on medium speed for 2 to 3 minutes.

7. then  divide the batter equally between the prepared pans, and bake for 30 to 40 minutes, or until a toothpick inserted in  the cake comes out clean and it it golden brown in color ..

8. Cool completely on a wire rack  before you start  fill and frost your cake or simply lightly  sieve  icing sugar over it for presentation
